Chocolate philosophy: Chocolate should be elegant, clean, extremely flavorful and artistic. Yet it should invoke an immense amount of pleasure.
Inspiration: I have been a pastry chef for 20 years, and have been doing chocolate for 15 of those. So it has really morphed into its own.
Business profile: I came on board with 2 Chicks last May, because the company is doing something different in the industry and I really get to write my own rules. Our initial packaging and products that roll out this holiday are about being unique, deliciously consistent and sustainable. We’re really proud of “The Wine Collection” which is filled with Spicy Merlot Bon Bons and Cabernet Caramels. We’re using “green” cello, 30% recycled cardboard, and encouraging our clients to use our refill packs that are coming out soon. Our new store (slated for late 2010) will be like Cocoa-Topia meets Sex and the City.
Varieties of chocolate: From barks & toffees to bonbons and tiles, we have about 10-15 different selections. Initially, we’re starting small and are laser-focused on quality and experience. For us it’s not about volume, but about the ultimate experience for the 2 Chicks’ customer.
Signature chocolates: Vanilla Caramel, Spicy Merlot Ganache, Raspberry Ganache, Peanut Butter Cream
Most unique piece: Brown Butter Ganache with white chocolate
Personal favorite: I do a peanut butter filling that is really smooth and rich. I am a big fan of peanut butter and love how its taste can linger in your mouth for a few minutes.
